SAN JOSE DEL CABO.   Under the direction of internationally known chef Margarita de Salinas, Don Emiliano restaurant offers upscale dining, Mexican style. Pre-Hispanic and colonial dishes from all over the country are the focus here, making for an unusual and exciting experience for adventurous diners. Try Pescado Tikin-Xic, Yucatán style fish in achiote sauce wrapped in banana leaves; or Dobladitas Negras, plantain tortillas with roasted duck and Oaxacan black mole.
