SAN JOSE DEL CABO.   El Chilar's Oaxacan owners devise new menus every month or so, consisting of particularly creative dishes that capitalize on fresh Mexican ingredients, especially chiles. Don't let that scare you, though – the chefs focus on robust flavor rather than tongue-burning spiciness. Moles are notable, the complex combination of ingredients lending alternately nutty, smoky or sweet flavors to meats. Excellent wine and tequila menus offer ample choice for liquid accompaniment, and the rustically stylish setting is enhanced with paintings by local artist Dana Lieb of the Pez Gordo gallery.   (© 10Best)
