ATOCHA.   Authentic Basque cuisine is served in this restaurant that features both a light and airy dining room and an exposed brick "tavern" cellar dining area. In keeping with Basque tradition, diners are waited on by only women, serving salt cod in garlic and parsley, calamari and hake. For dessert, try leche frita (fried custard).
