CENTRO.   Carmencita, founded in 1840 and authentically restored, reflects true Spanish charm in intricate tile work and 19th century detailing. Long a gathering spot for Madrid's well known, Carmencita serves traditional Basque fare, including escalope of veal, filet of pork, codfish with garlic, and a house specialty, "cocido madrileno," a regional stew that's enough for two.
