This eatery offers an education in offal. A simple, but very lively, old-school restaurant, Gallinejas serves succulently prepared testicles, spicy tripe, sweetbreads, calves' brains and even bone marrow, all washed down with some strong red table wine. For over 100 years, chefs here have transformed discards into culinary delights: push past your squeamishness and sample their artistry.
