Such an instant success, Chantarella had to move to a larger location after just two years of business. This spare – but warm and welcoming – restaurant has proved that the new wave of Madrid cuisine isn't all about parmesan foam and garlic aerosols. Flying in the face of fussy gastro-fashion, the chanterelle mushroom is an entirely appropriate symbol for the Díaz brother's earthy, robust cooking with a modern touch. Try a dish of turbot with artichokes and crisp Iberian ham; or scallops and wild mushrooms on creamed carrots; or roast beef on a bed of potato, Swiss chard and rosemary. As the space – decorated in subdued grays – still only has room for 35 guests, reservations are necessary up to a week in advance.
