CUZCO. Yes, this means barbeque in Spanish. "Al" is the owner, and his place is for anyone longing for home-cooked American food. Especially good are the pork ribs, BBQ chicken and onion rings. The hamburgers? They're barbequed also! The fresh salad bar is very popular, and Alfredo's is one of the few places in Madrid where you can get corn on the cob. Reservations recommended. Metro: CUZCO

Owned by two Americans, a Frenchman and a Spaniard, Cornucopia is bound to offer interesting cuisine, and it indeed does. Located in a 19th century palace. Look for American and Californian nouvelle house specialties of grilled tuna, stewed rabbit with thyme and stuffed pork loin. Cornucopia has bragging rights to one of the best wine lists in the city, as well. Reservations recommended. Metro: Opéra

ThisNow a huge chain, this first-rate American eatery first set up shop in Madrid in 1971 and was one of the first American restaurants in Europe. Their premium dinners include ribs, steaks and an array of sandwiches. A great taste of America in the heart of Spain. Business casual attire. Metro: Quevedo

RETIRO. The American owners have retained three classics: steak tartare with Jack Daniels, Caesar Salad and an all about-American hamburger but the rest of the food! is creative Mediterranean fusion with dishes such as duck liver in truffle sauce and chorizo, and sweet pepper pastries. The excellent wine list and superior service draw a high-end crowd and plenty of famous faces. Reservations required.
