LE LAMENTIN.   Nestled near the base of Pays Mélé, you'll find the charming Hôtel Plantation de Leyritz and its award-winning French-Creole restaurant, expertly run by a head chef who understudied under some of France's most celebrated masters. Specialties include mahi mahi mousse with sea urchin sauce, Antillean-herb foie gras, Continental-style rack of lamb, and terrine of boiled calf's head with virgin olive oil and sweet pepper sauce.
