LAHAINA.   While vacationing in Hawaii, you may not expect to see an authentic French restaurant. Maui cuisine does not always revolve around seafood and tropical flavors, however, and Chez Paul Restaurant is proof. Classic French techniques shine in dishes like Coq Au Vin (baked chicken), Le Canard A L’Orange (roast duck), and foie gras. The chef at this Maui restaurant does pay homage to the islands, and fresh fish poached in champagne as well as succulent Kona lobster are hot items on the menu. Overpriced, the fish was dry and tasteless, and the atmosphere was far from romantic.
