WAILUKU.   Marked only by a neon sign that reads "Open," this Vietnamese eatery attracts diners from all over Maui. Known for its healthy, flavorful cuisine, the menu focuses on fresh herbs, vegetables, and seafood. Noodle soups are popular (as are all the soup varieties), along with curries, stir-fried entrees, and steamed fish. Diners also clamor to try the Vietnamese "burritos," where they choose fillings from a selection of vegetables, tofu, and noodles and then wrap everything up in rice paper and dunk the packages in a tangy dipping sauce.
