MIDTOWN.   Located in an old gas station, Payne's defines barbecue to Memphians and visitors alike. Although you won't be impressed by the exterior of the restaurant, the taste of this barbecue will knock you off your feet. Barbecue is served sliced or chopped with hot or mild sauce as well as in the form of ribs piled high on a plate with coleslaw on the side. I wish they had some ribs for us to try but the chopped pork sandwich seemed to be in demand on this Saturday afternoon. I could not smell any smoke when I walked up to the place so I was a little worried. The chopped pork sandwich, lovely assembled by Momma, had moderately moist pork, salt and black pepper type of crust, but the piece de resistance was the vinegary slaw on top coupled with their midl/hot sauce blend that was sweet/hot and tangy all at once. The sandwich with all the parts was a symphony in the mouth, on their own they would not turn you on. Just watching the different people that came through the door was entertainment alone.
