SUNSET. Bucking expectation, suburban Kendall is home to some of Miami's best sushi. Over the years, Shibui has earned a faithful following with its carefully prepared Japanese fare, which includes teriyaki chicken, tempura vegetables and impeccable sushi. The extensive menu marries these classics with specialties like the Caliente roll, made with tempura mahi mahi and dressed with a zingy sauce. Head to the second floor for traditional Japanese seating on cozy floor pillows.

SOUTH BEACH. The key to dining at Nobu the first couple of times is to ask lots of questions. Servers are happy to guide you through the menu and help you navigate the sushi experience. Tempura, teriyaki and salads frequently entice diners, or you can give yourself over to the chef's acumen with the omakase, a meal of eight carefully composed dishes that allows you to sample a variety of flavors and textures. Worth noting: The sleek, contemporary outpost is also a celebrity haunt.

SOUTH BEACH. The elder statesman of SoBe sushi joints, Toni's has managed to stay hip, young, and trendy despite myriad competitors that have sprung up over the years. Indeed, locals and knowing tourists applaud the laid-back atmosphere and quintessential neon lighting they find here – of course, the splendid rolls probably win their share of loyal customers as well. From salmon carpaccio, California rolls, and Miami Heat rolls (tuna with scallions and sesame oil) to seaweed salad, sashimi, and Beach rolls (baked eel, salmon, avocado, and spicy mayo), everything is top-notch. On weekends, Toni's tends to be at its busiest, so expect to wait a bit for a table if you don't arrive early.

SOUTH BEACH. Tucked inside the basement of the "shabby chic" Townhouse Hotel, this slick, trendy restaurant has a relaxed, lounge-like vibe. Perfect cocktails and wonderful sushi are the top attractions. The menu features exotic Asian-fusion dishes such as lobster roll with yellow tomato and yuzu pepper dressing, live Maine lobster sashimi, and sun-dried tomato and avocado roll with garlic ponzu oil and green tea salt. Everything is painstakingly prepared and beautifully presented. A good wine list is available, but check out the interesting sake selection. Reservations recommended.

SOUTH MIAMI. This secret treasure is a favorite with an impressive number of Miami's Japanese-Americans, thanks in large part to its irresistible sushi and tempura dishes. Regulars swear that no other restaurant in West Dade serves up such a delicious variety of sushi, including everything from Toro rolls to fresh sashimi. Best of all, the atmosphere is casual yet composed, happily lacking the flash and flair of some of its Miami cousins. Arrive early on weekends and expect to stand for a bit. Don't fret, though, as you'll soon discover what so many locals have tried to keep to themselves – Matsuri is well worth any wait.

CORAL GABLES. This tiny, family-owned favorite features some of the best Vietnamese cuisine in the area. The decor is simple and minimal, providing a clean, serene setting for your meal. Delicious meat, seafood and vegetarian offerings are available, and each dish can be customized to your ideal level of spiciness. Sample great salads, such as green papaya or spicy calamari, and filling noodle dishes topped with savory sauces. Caramelized prawns and grilled salmon with mango are two seafood favorites. A nice wine list and a short but stellar dessert menu make this an all-around winner. Business casual attire.

WESTCHESTER. Find Chinese cuisine at its best at this spacious, airy restaurant. Devoid of all the typical decorative trappings, the minimal interior is always full of fans clamoring for some of the best dim sum in town. Cantonese and Mandarin dishes are specialties, and the menu is dotted with unexpected items ranging from early leaves of snow pea pods to fried chicken feet. You'll also find plenty of traditional favorites, including orange chicken, seafood stir-fries, and numerous savory beef and pork dishes. Try the dim sum lunch for a sampling of the best the restaurant has to offer. Reservations accepted.

MIAMI BEACH. Enjoy authentic Thai cuisine in this classy dining room, simply adorned with white linens and colorful framed artwork. Flavorul bites of chicken satay with peanut sauce or hot and sour shrimp and lemongrass soup whet the appetite for more of Tamarind's exquisite Asian eats. Indulge in one of the covetous dinner specials such as fried whole snapper with chili sauce or vegetarian yellow curry with tofu, potatoes, carrots, onions and coconut milk.

LITTLE HAVANA. Surrounded by Cuban and Spanish eateries, this Vietnamese gem is always crowded with regulars who appreciate the cuisine's spicy, subtle flavors. Don't expect lovely decor – the room is sparse and plain, and the service has a reputation for being a bit slow. But your patience will be rewarded with some of the best Vietnamese food in Miami. Have an exotic beer and then enjoy the pork, a winner in a unique sauce made with ground nuts. Or try dolphin in mango sauce with crisp, flavorful spring rolls – a specialty of the house. Various fresh catches are always available, typically enhanced by sauces featuring tropical fruit and herbs.
