DOWNTOWN. For an impressive meal of fine aged beef or fresh seafood, The Capital Grille is an unqualified best bet. The dining room, decked out in leather and dark wood, is ideal for power meetings, and a glass-enclosed smoking room ably accommodates cigar aficionados. Customary American favorites are exquisitely prepared, from lobster and crab cakes to pan-fried calamari, from double-cut lamb chops to 24-ounce grilled porterhouses. An extensive selection of more than 400 wines is routinely recognized by Wine Spectator with the Award of Excellence.

SOUTH BEACH. Frequented by an upscale, highly visible clientele, Prime 112 is a steakhouse without compare. Its decor honors the restaurant's historic structure while invigorating it with modern detailing. The menu continues this theme of reconsidered classics. Dry-aged Prime beef arrives sizzling, cooked to your specifications, and topped with a choice of butters or sauces. "Accessories" are sublime: truffled mac and cheese, sautéed forest mushrooms, or even rum-baked sweet plantains. Desserts, too, get stylish attention – apple pie is topped with candied walnut streusel, while chocolate pudding cake flaunts Amarene cherries and a dollop of sweet cream.

CORAL GABLES. Christy's is a long-standing local favorite in Coral Gables, with a cozy dining room, attentive service and perfectly prepared, classic Continental cuisine. A favorite for business lunches and power dinners, the steaks are especially popular. Try the huge prime rib with horseradish sauce or the filet mignon in a flavorful teriyaki marinade. Lighter appetites will love the Caesar salads and tasty baked sweet potatoes. The grand finale? Impressive Baked Alaska or dense Blackout Cake are two outstanding options. Reservations recommended. CORAL GABLES. This beloved chain of steakhouses bills itself as the "Home of Serious Steaks," and one visit will tell you that's more than a marketing slogan. Steaks are known for their sizzle, achieved by a dollop of butter dropped on hot-from-the-oven cuts; your choice will still be sputtering when it's placed in front of you. Ruth's Chris isn't intended for calorie-counters, but it is a true steak lover's haven. The establishment also takes pride in its great service, extensive wine list, and atmosphere of comfortable elegance. Valet parking $6.

DOWNTOWN. Morton's is an upscale chain steakhouse that serves a lot more than just American Angus. The decor is masculine; the atmosphere, classy. Expect to be treated well by the friendly wait staff, who present dinner selections by bringing out a cart of options and telling you stories about each dish. Favorite entrées include blackened swordfish, fresh Maine lobster, and, of course, the 24-ounce porterhouse. Reservations are suggested.

The extensive menu draws you in, offering tantalizing herb-infused escargot, tropical sea bass with avocado salsa and prime rib grilled over aromatic Tuscan oakwood. Beef is a favorite, and the 16-ounce aged "Super Steak" has been named the nation's number one steak by "Wine Spectator." The football theme is evident throughout, with photos, pennants and newspaper clippings on every wall – particularly those detailing Shula's 1972 Super Bowl victory. Business groups, families, sports fans and steak lovers of every ilk rave about great cuts like the 48-ounce porterhouse and the tender filet.
