Eating out in New Orleans is a true experience to say the least. The local culinary scene, while not boasting the number of restaurants you'd find in New York or Los Angeles, is nevertheless one of the most dynamic in the US. In New Orleans, good cooking isn't just a treat, it's a requirement. Here, chefs who excel at their trade John Besh, Emeril Lagasse, Susan Spicer, et al enjoy rock star status. From the casual, Parisian-style cafés and bistros lining Jackson Square to the ubiquitous corner shops peddling po' boys and muffulettas, there's something to suit just about any palate. That said, no visit to the Crescent City is complete without sampling a few local favs, and you'll find no shortage of places ready to serve you their versions of downhome Cajun classics like etouffée and jambalaya. Many of the city's Creole eateries, meanwhile, tend to lean toward the haute side of the spectrum, often mingling several culinary styles to mold dishes like fennel-crusted salmon with crawfish, quail with apple cider sauce, or even shrimp, crabmeat and crawfish casserole baked with eggplant. -- Emma Rayner, Writer
