EDITOR REVIEW: FLATIRON DISTRICT. As the waters of the North Atlantic crash onto the shores of Brittany, the salt residue leaves tiny, flower-shaped formations behind. These flowers of salt are "harvested" and used to flavor food. From such tradition, the Flatiron's rustic Fleur de Sel draws inspiration. It regales patrons not only with its sophisticated approach to the "dining out process," but also with more subtle nuances like the amiable service and outstanding wine list. Owner-chef Cyril Renaud, all the while, brings out the best of his native Brittany with dishes like halibut with glazed endive, sea scallops with artichoke purée, and venison loin with potato gratin.
