WEST VILLAGE.   Run by renowned chef Jean-Georges Vongerichten, this Villager carries on the tradition that fashioned Mercer Kitchen and JoJo – that is to say, it's fashionable not only for cutting edge cuisine, but as a place to see and be seen. Neutral tones color the minimalist dining room, and geometric shapes give it further definition, from the linear tables and chairs to the sleek, round support columns. The cuisine is billed as New American, but as is the case with most Vongerichten creations, such appellations barely scrape the surface when you factor in dishes like oil-poached hamachi with fresh wasabi.
