Gourmands take note: if you are in this neck of the woods, plan ahead and make reservations for an experience at the Culinary Institute of America where tomorrow's celebrated chefs are being trained. At the American Bounty, the atmosphere may be a little more relaxed but the attention to detail never is. The menu regularly features regional produce and herbs, and a revolving roster of American classics such as roasted bass or western barbecue braised beef short ribs with a side of succotash and yucca tots. Be sure to save room for dessert when the pastry chefs shine.

As American as a slice of apple pie, and as haute as a blackberry lemon soufflé, the students of all things sweet and savory temper their skills at the ovens of the Apple Pie Bakery Café. Hearty breads, flaky croissants, thick bear claws and creamy cheesecake are just some of delectable items you'll find on the menu to eat in or take away. Eating in is a casual affair; no reservations necessary. Stop in for rustic sandwiches, thick soups, crisp salads and an array of pies, tarts and drinks made with the Hudson Valley's finest apples. Open days do depend on the school schedule; please check in advance.

Victorian charm comes to life in this cozy little establishment orginally built in the 19th century to serve as a tavern for stagecoach travelers. Snowy linens and lace curtains set off the watercolored walls and plushly cushioned seats that invite lingering. You are sure to find an excellent pairing for the American style cuisine from the extensive wine list. The lobster and shrimp shepherd's pie is a signature dish. The patio is open for seating in fair weather.

The interior of the ocher and earth toned dining room with its wide rattan chairs is as welcoming as a sun-drenched Italian villa thanks to a full span of French doors. The outdoor patio and oyster bar, weather permitting, are just as inviting, offering a full sweep of the Hudson and the hills rising on the opposite bank. Seafood is the star of the menu which offers an array of pastas such as the handmade "black" tagliatelli with lobster and brandy or spaghetti pirati. Daily specials and good desserts complement the regular offerings.

Flavors and selections abound within the warm embrace of the elegant dining room and the suggestions of the knowlegeable staff. Choose from what's on the menu or take advantage of the ever-changing, long list of Northern Italian specials. An award-winning wine list, especially focused on the best Italian varietals, provides the perfect accompaniment to a meal that, though pricey, is well-worth the cost.

Housed in the former Newburgh Yacht Club, this dining room with a view offers guests sweeping views of the Hudson along with heaping plates of fresh seafood, steak and salad. Come for the seafood bar on weekends and enjoy the live music. In this cozy room decorated with a bounty of flowers and flickering candlelight, you are assured of enjoying an intimate dinner. Pamela's food is also available to go for lunch (Friday, Saturday, Sunday) or dinner.

Slow cooked in an authentic smoker, you would swear the pulled pork, chicken and ribs were made in the Carolinas and not in the Hudson Valley. The menu items are the only down home things you'll find in this upscale 1880s vintage restaurant where exposed brick, gleaming woodwork and pressed tin ceiling have been lovingly restored to former glory. The bank vault, which gave the restaurant its name, now houses an eclectic selection of wines. Stop in for lunch or dinner after visiting the Dia.

Natural light off the Hudson River spills into the dining room setting the oak furnishings aglow. White linens and snowy china showcase the careful presentation of New American cuisine from chef-owner Mark Mallia. The menu changes to use only the freshest, seasonal ingredients, but you might find littleneck clams steamed with chorizo, a goat cheese and smoked scallop salad or seafood paella. The proximity of the water informs many of the choices, but for those who prefer them, rack of lamb and other choice meats are available. An outdoor patio gets you even closer to the water in the warm months.
