YORBA LINDA. Dark woods, sweeps of vibrant red on walls and tablecloths, and gilt accents create a comfortable but upscale setting for visitors to this laidback steakhouse. The strip mall location belies the place's carefully prepared food, which focuses on dry-aged Montana Legend beef. Try a skirt steak, or go for a 16-oz. porterhouse if you're really in need of sustenance. These cuts include vegetables, starch, salad, and sauce for a complete meal. Other options? Chicken, lamb, pork, veal, burgers, and satisfying carbs in the form of pastas and risottos.

NEWPORT BEACH. Paul Fleming (of P.F. Chang's restaurant fame) succeeds with his first venture into the steakhouse realm. The upscale setting attracts a veritable "who's who" of Orange County's elite, and crowds tend to be large, especially on weekends. Featured main dishes include mouthwatering Australian lamb chops, filet mignon, a 22-oz. porterhouse, and steamed Alaskan king crab legs. Couple your entree with a side dish of garlic mashed potatoes, shoestring potatoes, or sautéed spinach, and you've a meal fit for a king. Supplement it with a full-bodied red – the wine list boasts more than 100 by-the-glass labels.

COSTA MESA. Many people claim that this well-loved spot serves the best steaks on the West Coast, and it's not difficult to see why. There are plenty of bone-in cuts on the menu, including a porterhouse and a filet; pair a juicy, tender cut with generous portions of mouthwatering sides like a loaded baked potato or sautéed spinach. Take home traditional treats like key lime or pecan pie if you just can't manage dessert at the time. Expect a good contingent of pretty people to go with the huge portions and upscale ambience.

SANTA ANA. Tuxedo-clad waiters set the tone for a Midwest classic that's staked a claim on the West coast. Known for tableside presentations (yes, that's a live lobster on the cart), this steakhouse is famous for its 24-ounce porterhouse and its hearty portions. Sides must be ordered separately at additional cost, and the menu offers seafood, chicken, and veal for those who don't relish red meat. Plus, wine suggestions are available to complement entrees. Expectedly, the atmosphere is plush and subdued.

IRVINE. This beloved chain of steakhouses bills itself as the "Home of Serious Steaks," and one visit will tell you that's more than a marketing slogan. Steaks are known for their sizzle, achieved by a dollop of butter dropped on hot-from-the-oven cuts; your choice will still be sputtering when it's placed in front of you. Ruth's Chris isn't intended for calorie-counters, but it is a true steak lover's haven. The establishment also takes pride in its great service, extensive wine list, and atmosphere of comfortable elegance. Reservations recommended.

LAGUNA NIGUEL. Regarded as one of Laguna Niguel's finest restaurants, this Southern-inspired steak and seafood house draws raves for its hunt club decor and a brilliant menu that offers contemporary takes on downhome favorites. Among the dazzling entrees that have earned chef Christopher Reischl high praise are Big Easy-style Voodoo Steak, buttermilk fried chicken with mashed potatoes and thyme cream gravy, and crabmeat stuffed with Savannah shrimp.

ANAHEIM. Elegant dining awaits at this steakhouse, and its menu has evoked many a critic's pleasure, courtesy of superb American Angus beef, prime rib, and fresh seafood. Steakhouse 55 offers a terrific international wine list and a tranquil, refined setting where oak trimwork, etched glass partitions, and pleasant shades of mauve and burgundy add touches of romance.

FULLERTON. This is not a white-tablecloth, "let me just expense it" kind of a steakhouse. No, Stubrik's is a fun place where you can always find live Irish and jazz music, late-night happy hours, and incredibly reasonable prices. High-quality beef is paired with surprisingly affordable bills – equally tasty and wallet-friendly are meatloaf, pork loin, and pastas. Prices are for complete meals, but a side of garlic bread makes for a nice splurge, too. For a cut above the usual and for great atmosphere, this place can't be beat!

LAGUNA BEACH. Energetic yet romantic, cozy Tabu has mesmerized locals with its accomplished cooking, which engages diners when being prepared in the open kitchen and becomes more delicious when actually experienced. The fabulous restaurant builds its reputation on steaks and seafood, but they're a far cry from what you might expect in a men's club enterprise. Here, give yourself over to an Australian Kobe filet mignon, to Tasmanian salmon with roasted baby beets, or to an Angus bone-in rib-eye with forbidden rice risotto. Lamb and pork chops and pastas can also be had. Terrific service is a boon, as is the stylish ambience.

TRABUCO CANYON. A family-friendly place with a strict "wear a tie at your own risk" policy, Trabuco Oaks has been an Orange County treasure since 1968, when the Sherod family opened a small snack bar for campers at nearby O'Neill Park. Although the scale of the restaurant and the size of the menu have grown over the years, regulars are quick to point out that the casual atmosphere and neighborly service haven't changed one iota since the early days. From mammoth sirloin steaks and hand-cut French fries to kid-portioned, homemade spaghetti and hand-battered chicken, Tabuco can sate just about any appetite. Reservations are suggested.
