EPCOT ®.   Modeled after a turn-of-the-century Parisian brasserie, this restaurant succeeds under the tutelage of three French chefs. A classic in the Disney fold, Les Chefs delivers reliable, if not overly innovative, cuisine that more than fits the bill for eager patrons. And in the tradition of the brasserie, it works. Escargot, pates, and beef burgundy answer the call for familiar favorites; grilled salmon, Mediterranean seafood casserole, and coq au vin also deliver the goods. Desserts include crème brûlée, soufflés, and pastries. If you're in the mood for something more formal, the upstairs venue offers more upscale food at commensurate prices.
