History and culture combine to forge a strong bond between Oslo and the North Sea, and it shouldn’t surprise travelers that kreps (crayfish), blåskjell (mussels), and laks (salmon) are staples at many of the city’s top restaurants, including revered institutions like Statholdergaarden and the Grand Café. That’s not to say that meat doesn’t find its way into the Oslovian diet – reinsdyr (reindeer) and elg (elk) have always been extremely popular. Fresh-grown vegetables and fruits also have their devotees, and the latter are especially tasty when served over a bløtkake (cream cake). For years, Norwegian cuisine had a rep for being bland, but things have changed of late, and many of Oslo’s top restaurants now boast chefs with international perspectives. The city’s also seen an influx of ethnic eateries, and a stroll through Aker Brygge reveals a healthy mix of Moroccan, British, Japanese, and French restaurants.
