PALM SPRINGS. A sunny study of retro chic and Hollywood glam, Citron surrounds patrons with white-lacquered chairs, mirrored panels, white marble floors, and lemon-hued walls. The restaurant's a magnet for hip visitors, who relish its California cuisine graced by plenty of fresh produce. A double-cut grilled pork chop gets a kick with sage and fig barbecue sauce, while seafood risotto is enriched with saffron and preserved lemon. Steaks, rack of lamb, and fish can also be had. The restaurant bar is a stylish gathering place for after-dinner drinks and polished camaraderie.

DOWNTOWN. Star power is on call at this restaurant – not only was it a hangout for Cary Grant, but it's under the masterful tutelage of celebrity chef Andrew Manion Copley, and it attracts personalities like Anderson Cooper. Diners can't get enough of the romantic, open-air patio, and the sublime cuisine, informed by Copley's tenure at restaurants across the globe, includes Muscovy duck breast, seared Scottish salmon, lobster pot pie, and tandoori chicken breast. A broad wine list arranged by type promises an appropriate accompaniment. Terrific service is a pleasant perk. Closed during the month of August.

PALM DESERT. Chef-owner Bernard Dervieux runs this charming restaurant, which offers quaint dining rooms, an outdoor patio, a bar, and a separate room for diners indulging in tasting menus. The eclectic cuisine has French and Californian influences, as seen in lobster ravioli, roasted rack of lamb, and sweetbread-stuffed quail. Other possibilities include oven-roasted beef chop, rabbit, and veal. A great wine list is available too, along with homemade desserts and a gourmet lunch menu of salads, sandwiches, and hot entrees.

DOWNTOWN. Slate and copper accents give Kaiser Grille an appealing gravity, which is in perfect keeping with its sturdy menu of American classics. Prime rib and grilled steaks are often served with rich, tempting sauces, and double-cut pork chops and seafood paella exhibit great rustic flavor. Additional possibilities include fresh fish and an upscale meatloaf. Plus, alfresco dining and a comfortable, laid-back atmosphere make it a terrific place to enjoy a meal with friends. Although it's located in a historic ranch-style house near the hubbub of Palm Canyon Drive, this restaurant seems a world away from the fray. The magical interior features priceless tapestries and Louis XV furniture, and the outdoor patio boasts lush trees, fragrant flowers, and tables adorned with crisp linens, fine china, and candles. The five-star, award-winning restaurant serves delicacies like a veal chop flavored with calvados, Maine lobster ravioli with basil bisque, and roasted rack of lamb with thyme, rosemary and garlic. Considered by most to be the town's finest restaurant.

This inn restaurant has been touted as one of the town's best by a number of upscale publications. The elegant place features continental cuisine beyond compare and a gleaming antique oak and mahogany bar known as Casablanca's. Entree selections include fresh filet of sole piccata, filet mignon en croute (stuffed with oysters and dressed with herb tomato sauce), and the signature veal Ingleside with mousseline sauce and fettuccine. Melvyn's also boasts two world-class wine cellars with premium vintages from around the world. The ultimate in fine dining, it's an excellent place to spot celebrities – past guests have included Bob Hope, John Travolta, and Gerald Ford.

Boldly patterned textiles and carpeting, reflective ceilings, expressive artwork, and a tension between light and dark hues add a certain quirky elegance to this estimable hotel restaurant. Updated bistro fare is the culinary signature, as evidenced by duck confit with truffled potatoes, osso bucco with saffron risotto, beef short ribs, and pistachio-crusted rack of lamb. Choose your favorite main course – following a starter of fresh oysters – and finish up with a pear and almond tart and a splash of dessert wine. Closed July and August.

RANCHO MIRAGE. A much-loved standard for many years, Shame on the Moon offers upscale dining without off-the-chart prices. Folks return again and again for the excellent menu, which includes a spicy penne pasta with andouille and prawns, sauteed calf's liver with bourbon glaze, grilled filet mignon with blue cheese, and seared ahi with wasabi mashed potatoes. A good selection of West Coast wines is available, along with a full bar. Always busy.

DOWNTOWN. Zin's large, open dining room boasts golden walls, black bentwood chairs, and strong figural artwork. It's a perfect setting for sampling the Belgium-born chef's impressive cuisine, which includes starters of vichyssoise, steamed mussels, and Peeky Toe crab and avocado salad and runs to main courses of buttermilk fried chicken, Angus beef stew, and grilled hangar steak. A hefty, mostly-domestic wine list provides plenty of options, and the dessert list begins with a classic tarte tatin and ranges to chevre cheesecake with berries. If you're wondering, Zin is short for "zinfandel."
