5ème ARRONDISSEMENT. Au Moulin a Vent "Chez Henri" is incredibly popular, especially for its meat dishes. In fact, you can have beef prepared just about any way you could imagine. Indulge in the entrecôte de Salers (rib eye), or sample boeuf a la ficelle (a fillet quickly cooked in boiling water). You can also have a try at "typical" French dishes such as snails (escargots de Bourgogne) and frogs' legs (cuisses de grenouille). METRO: Cardinal-Lemoine (line 10) or Jussieu (line 7 or 10)

6ème ARRONDISSEMENT. No ordinary neighborhood bistro, Aux Charpentiers lures diners with a warm atmosphere, personal attention and traditional French delicacies. Its fine antique décor pays tribute to the neighboring carpenters' guild. Return patrons include George HW Bush and Dick Cheney. Boudin noir (black pudding), duck confit and foie gras are among the menu's offerings, but inquisitive diners come for the calf's head. End your meal with a classic dessert such as the pear tart, or try baba au rhum, a yeast cake soaked in rum sauce. METRO: Mabillon

4ème ARRONDISSEMENT. You won't find anything fancy at Benoit, but you will discover good traditional French cuisine. Owned by Monsieur and Madame Petit before being sold to Chef Ducasse’s Group, the restaurant delivers such popular dishes as chicken cooked in a salt crust or cassoulet with fresh beans. Service is reserved, but you'll relish this true example of authentic French fare. METRO: Châtelet

3ème ARRONDISSEMENT. Established in 1924, Chez L'Ami Louis is still a great place for a delicious meal. Don't let the building's aging appearance fool you, because the restaurant is known for its great French fare, including lamb cut French-style and foie gras. The quaint, simple interior establishes a comfortable, friendly environment and is ideal for a satisfying meal. An ideal place for people watching, too - Presidents Clinton and Chirac have been there. METRO: Arts-et-Métiers (line 3 or 11) / Temple (line 3)

6ème ARRONDISSEMENT. You'll feel most welcome at Chez Maître Paul, which has a strong reputation for free-range chicken dishes and entrées made with Arbois wines. The menu specializes in regional dishes and wines, which add to the appeal of the cuisine. After enjoying a delicious dinner, top it off with chocolate fondant or walnut meringue. METRO: Odéon (line 4 or 10)

10ème ARRONDISSEMENT. Chef Thierry Breton adds creative flair to traditional French recipes. Despite his relatively recent appearance on the dining scene, his popularity has grown quickly. Try in-season game dishes, Breton crêpes, or lasagna layered with chèvre and artichoke hearts. The decor is simple, the atmosphere is relaxed, and prices are affordable. For dessert, you may order in advance a delicious speciality, with reference to the chef's origins in Bretagne: a Paris-Brest. Much of the seating is at community tables with other guests, so if you prefer a table for two make a reservation. METRO: Gare du Nord (line 4 or 5 or RER B) / Poissonnière (line 7)

1er ARRONDISSEMENT. From the beginning of the century, this brasserie has charmed. Chez Pauline is extravagantly decorated, and André Génin's authentic French dishes are similarly rich. Among them are a feuilleté with snails and oyster mushrooms and a delicious roast Bresse chicken. A great selection of sinful desserts lets you finish your meal on a decadent note, and there's a tempting wine selection too. METRO: Palais Royal-Musée du Louvre (line 1 or 7) / Pyramides (line 7 or 14)

15ème ARRONDISSEMENT. Thanks to a fixed-price menu, meals at L'Os a Moelle can be enjoyed for a reasonable expense. Chef Thierry Faucher prepares a different six-course meal every day, so although diners don't really have a choice in what they eat, by placing their trust in Faucher's culinary expertise, they come away pleased again and again. A popular place for the young, professional crowd. METRO: Lourmel (line 8)
