As prized for its turn-of-the-20th century decor (the etched ceramic panels of exotic plants, black and white floor tile and Charlie Garrey's painted ceiling of African scenes) as it is for its true brasserie food (authentic Alsatian fare), Lipp is more than a place to wash down sausages with beer. For over a century, the politicians, thinkers, writers and artists who have called Paris home have congregated here from Hemingway to former President Mitterand. Reservations are recommended for dining, yet not accepted for sidewalk tables. METRO: St-Germain-des-Prés

7ème ARRONDISSEMENT. Proust had his madeleines but Chef Christian Constant has a chalkboard menu full of memories at the Cafe Constant. The casual atmosphere of this dimunitive corner cafe is in direct contrast to the hearty, old fashioned meals made popular in the 70s and include a signature veal "Cordon Bleu" and such tempting treats as profiteroles and creme caramel. Just don't get your heart set on ordering coffee with dessert, the waitstaff aptly advises against it - the coffee gets cold as you enjoy your sweet! METRO: Invalides or Ecole Militaire

6ème ARRONDISSEMENT. Café de Flore is just a little older than Lipp, established around 1887, but no less of a hangout for the literati. So named for the small sculpture which was on the opposite side of the blvd St-Germain, its tables still snugly wrap around the corner and serve traditional favorites such as blini, soupe à l'oignon gratinée, profiteroles and a selection of coffee and tea. Should you need an elixir to get thoughts flowing in an existential direction, simply order one of the excellent French wines from the short list and you'll be channeling Sartre and deBeauvoir in no time. 9ème ARRONDISSEMENT. The venerable Cafe de la Paix began serving patrons in 1862. Its location within the Grand Hotel makes stopping in for a coffee and sweet an experience worthy of the surroundings. Soaring columns, sumptuous draperies, luxurious red leather chairs and crisp white linen cloths cast a spell of undeniable elegance. The interior terrace provides a glassed-in view of the street and the Opéra, while the outdoor terrace, weather permitting, allows for a true sidewalk cafe experience, albeit in the rarefied air of this neighborhood. Enjoy breakfast, lunch or a light snack, you'll feel that certain je ne sais quois just sitting here. METRO: Opéra.

1er ARRONDISSEMENT. Talk about a view that is both inspired and inspiring. The Louvre's main courtyard and I. M. Pei's glass pyramid are visible from the terrace and windows of this favorite haunt of impossibly chic Parisians. The tall columns, high vaulted ceilings and deep reds and golds of the decor lend an air of formality, but also a welcome respite to those who have been tromping through the museum for hours. Do note that the regular café service shuts down while it serves breakfast, lunch and dinner. METRO: Palais-Royal Musée du Louvre

Though not centuries-old like some of the other establishments, the Moderne is nevertheless quickly making a name for itself among the younger set, who, though they might be on the cutting edge of hip, may not necessarily have a wallet stuffed with euros. So you to can follow the trendsetters to this cafe which eschews the tired standbys for a varied and changeable menu of classics with a "moderne" twist such as breaded soft boiled eggs over spinach, langoustines, bonbons de sardines, and more. METRO: Bourse

6ème ARRONDISSEMENT. Though it has been open since 1847, the cafe (which is also by turns a brasserie and piano bar) wears the patina of age well. Leather banquettes, glossed wood tables, and small brass plates engraved with names such as E. Hemingway, create a distinctive air of luxury steeped in the romance of the legion of artists and writers who came to linger and tossed about ideas as easily as they tossed back drinks. You too can enjoy the fruits of the vine, their extensive wine list is as tempting as the menu with all manner of oysters, shellfish, veal or even the pan fried beef fillet, "Hemingway style." 7ème ARRONDISSEMENT. A relative newcomer to the cafe scene, Café de l'Esplanade fittingly sports a decor that is low lit and ultra modern lending it an air that matches the clientele - hip and cosmopolitan. The outdoor tables are the place to sit, where you can enjoy a drink or a meal (or both) with generally friendly service and a sumptuous view of Les Invalides. Alas it is only open until 8pm so plan accordingly. METRO: La Tour Maubourg

6ème ARRONDISSEMENT. Since 1686, this historic cafe has welcomed a who's who of history, literature, art, and politics, including Balzac, Voltaire, Robespierre and even Benjamin Franklin. It remains a sophisticated place to dine, and patrons, while they wait, soak in the ambience in rapt admiration of all that's gone on before. Shellfish and seafood are popular options, along with grilled beef, roast chicken or duck, and classics like coq au vin. Dessert delights range from chocolate sorbet to profiteroles. METRO: Odéon (line 4 or 10)

If you are wondering what a magot is, or why there are two of them, just step inside the iconic cafe and bear witness to the statues of two Asian gentlemen presiding over the center of the room. The tables outside are where history was made, hosting such literary greats that eventually a prize was created and eponymously named for the best talent and original work. You don't have to be a writer or artist to soak up a little of the atmosphere, although with the prices on the high side, don't be surprised if a cup of coffee sets you back a bunch of euros.
