PARK CITY.   Deliberately created to appear rustic, this two-level restaurant features distressed beadboard paneling and patinated walls, which are painted with Chiclets packages, murals, and the Coca-Cola logo. The cuisine is described as Nuevo Latino, meaning that it embraces the traditions of North, Central, and South America and their islands and oceans. Tapas items include ahi tuna, ceviche of the day, blue crab cakes, and zucchini pancakes. Representative entrees include Bahian chipotle and avocado pasta, Honduran lobster tail, Jamaican chicken, and barbecued prawns. You'll also find gourmet quesadillas, tacos, steak, grilled salmon, and hearty paella. The menu changes regularly to take advantage of the seasons' best ingredients.
