PEORIA.   Reservations are recommended at this unpretentious American establishment, the Hotel Père Marquette's signature restaurant. Carnegie's has built its reputation as a special-occasion place, and once you step inside, you'll easily see why. Its smartly-clad, professional waitstaff, sophisticated decor, tasteful artwork, and linen-appointed tables all contribute to the effect.
