DOWNTOWN.   Comfortably elegant, Lahiere's holds court on Witherspoon, as it's done for many years. The long-lived establishment has been lauded for food, wine, ambience, and service, and folks return again and again to recapture the pleasure of lovely, polished dinners. The menu in later years has forgone classic French fare for something more global, and it now offers items like honey-glazed roasted duck with hoisin jus, grilled veal medallions, and pan-roasted poussin with tomato ragout.
