CHÂTEAU RICHER. Each spring, sap is gathered from maple trees, then boiled down to the sweetness and density of maple syrup. Sounds simple enough, but in fact it's rather a lengthy and complicated process that's ultimately dependent on fickle weather conditions. For perspective, consider that approximately 43 gallons of sap are needed to produce just one gallon of maple syrup! Learn all the particulars and sample the end products at this traditional "sugar shack." A variety of maple products are available for purchase, as well.

VIEUX QUEBEC. This unique transport dates back to 1879, when William Griffith had it constructed to carry Québec's residents and tourists from Sous-le-Fort in Upper Town to Lower Town's rue Ste-Anne. The only such funiculaire in Canada, it travels at a 45° angle for more than 200 feet, all the while offering a terrific panoramic view of the city and the St. Lawrence River. Take a minute to browse through the souvenir shop, where you'll find several neat gift ideas.

LIMOILOU. Off to the races! Although horse racing in Québec started in the 1700s, on the Plains of Abraham, the Hippodrome wasn't constructed until the early 1900s. Ever since then, though, there has been plenty of racing action here. You can watch the races from the restaurant or bar, and there are a handful of slot machines, too.

VALCARTIER. Modeled after the ice hotel in Sweden, Québec's creation is every bit as unusual and trendy. More than 15,000 tons of snow and 400 tons of ice are required to construct the 30,000 square foot building, which takes some five weeks to complete. It's a magnificent sight, to be sure, decorated with sparkling ice sculptures and rustic deerskins. If you're unable to secure hotel reservations, or if sleeping in the cold leaves you cold, you can visit for a guided tour or a cocktail in the bar. There are also a multitude of fun outdoor activities to enjoy, including snowmobiling, dogsledding, snowshoeing, ice fishing, ice skating and guided hikes.

VANIER. It's a mall! It's an amusement park! It's...both! A shopper's nirvana, Les Galeries has over 250 stores, from major retailers to small independent boutiques. It's got the requisite food court, two multi-screen cinemas, an IMAX theater and plenty more. But it also happens to be the province of Québec's only indoor theme park, complete with rides, miniature golf, an ice skating rink, an arcade and a playground, all under one roof. Perfect for that rainy day when the kids have seen about all they care to see of the inside of your hotel!

VIEUX QUEBEC. The Canadian branch of the Grevin Museum in Paris, this wax museum serves as a showcase for Québec's historical heroes. Located in the Upper Town area, this 2-level 18th century dwelling is now "home" to the likes of Champlain, Lévesque, and Generals Montcalm and Wolfe. Modern culture is represented as well, including wax versions of several well-known 20th century politicians, celebrities and athletes.

SAINT-JEAN BAPTISTE. For a breathtaking, panoramic view of the city, enter the governmental offices on rue de la Chevrotiere, and look for signs and special elevators labeled "Anima G, 31e Etage." Follow the signs to the 31st floor, where you will have full access to unobstructed views of the city and the river. The observation level also serves as a gallery that showcases the work of local artists.

VIEUX QUEBEC. Starting with the arrival of Jacques Cartier in 1534, this exciting, 30-minute multi-media experience traces the city of Québec's history, right up to the present day. It's a quick immersion in history that will leave you with a newfound appreciation for the perseverance of those who came before us. Highly recommended. (Shows alternate in English and French.)

VALCARTIER. The Jacques-Cartier National Park has numerous outdoor activities for the whole family, from hiking and backpacking to canoeing and rock climbing, but the most mentally challenging activity is probably this huge 12-sided maze. The idea is to answer a series of questions to get to the centre of the maze and back out, but be warned – the process can take up to 2 ½ hours! The wooden structure has more than 200 one-way doors to allow monthly changes to the path, so even if you found your way through in July, the route will be completely different if you visit again in August!
