VIEUX QUEBEC.   When you get a craving for red meat, this is the place to go. The à la carte menu is brief – mostly salads and sandwiches. But virtually everyone opts for the fabulous table d'hôte: a five- to nine-ounce sirloin steak with mustard gravy, fries, soup and salad, and chocolate profiteroles for dessert.
