RAPID CITY. If you've got a hankering for pizza, you'll find a brief nirvana at this casual eatery. Dozens of combinations accommodate most any taste, as proven by Spicy Perogy (smoked bacon, potatoes, sour cream), Mardi Gras (chicken, Italian sausage, pineapple), and Tuscan (marinara, roasted garlic, spinach, chicken). You can also build your own pie if you've got something special in mind. Pastas and sandwiches are available as well, along with ribs, grilled chicken, and baked salmon. Desserts include cheesecake and lots of rich, chocolate concoctions.

DOWNTOWN. Northern Italian cuisine may seem an anomaly in this part of the world, but Botticelli carves its own niche with aplomb, and locals give the restaurant its due. Everything from food to service is superb, and a terrific wine list (half-price on Tuesdays) easily contributes to the appeal. Fresh seafood is flown in regularly, and pastas are rife with flavor and great ingredients. Chicken, veal, and beef dishes also entice, along with pizzas, sandwiches, and tempting desserts.

DOWNTOWN. If you've had your share of fast food and aren't eager to try local game, this comfortable restaurant offers plenty of options. If you're in the mood for something more casual, specialty pizzas are available, along with a large selection of calzones and stromboli. A few steak and seafood dishes can also be had, and lasagna comes in both meat and vegetarian versions. House specialties include chicken marsala, manicotti, eggplant parmesan, and grilled Italian sausage with peppers.

DEADWOOD. Billed as an Italian steakhouse, this satisfying restaurant offers warm atmosphere and excellent cuisine. Start with a classic carpaccio, or shun convention and sample smoked salmon cheesecake. Follow up with chicken piccata, pork medallions with onion marmalade, coriander-crusted tuna, or roasted hippie chicken. Pastas are often accompanied by grilled chicken or earthy mushrooms, and steak offerings range from a Black Angus rib-eye to a tenderloin with grilled vegetables. An extensive wine list is available, and the place elicits raves for its cheesecakes – don't miss them.

DOWNTOWN. Although the Radisson's signature restaurant may be named "Enigma," there's no mystery about its wonderful cuisine. Chef Gunter Schnepp has been with the place for many years, and his talents only grow. Perfectly cooked, tender steaks and chops are a restaurant favorite, but diners are sometimes fortunate enough to find dishes that honor Schnepp's Austrian heritage, like goulash, wiener schnitzel, and spaetzle. His chili also elicits raves from locals and has been honored at area competitions.

The family-owned establishment does a brisk business at both lunch and dinner, and its broad menu contributes to the rush and the appeal. RAPID CITY. This large hotel's dining room finds favor with both Rapid City residents and travelers, and since it's open all day, there's never a shortage of good food. SPEARFISH. Occupying an historic stone building that once housed a general store, Roma's is a wonderful boon to local diners. Chef-owner Leigh Kamstra, a CIA graduate, brings a sophistication to local cuisine, and an exhibition kitchen lets the chef's culinary skills shine. The menu features a selection of pastas and pizzas, and main courses include a traditional osso bucco, smoked pheasant ravioli, steak florentine, and garlic chicken. Grilled salmon and a signature lasagna also vie for attention. A great wine list provides apt complements, and local art adds extra character to a space that scarcely needs it.
