DEADWOOD.   This refined establishment, resting on the upper floor of the Midnight Star, occupies what was once a dry-goods store and is now owned by actor Kevin Costner. Highly rated for both its cuisine and its wines, Jakes is indisputably one of the area's best restaurants. Its superb cuisine looks to regional ingredients for inspiration and delivers sauteed walleye with macadamia butter, buffalo top sirloin, grilled duck breast with vanilla rum sauce, and oven-roasted pheasant.
