SPEARFISH. Take full advantage of South Dakota's bounty at this prominent restaurant, which culls the best regional ingredients and creates from them a purely local cuisine. Game is prominent, as proven by entrees featuring pheasant, elk, and buffalo. Rainbow trout and walleye also get special treatment, courtesy of sauces crafted from herbs, berries, and regional wines. Portions are generous, and if you pace yourself, you'll find a decadent payoff in Bay Leaf's fabulous desserts. Great ambience.

RAPID CITY. Folks in the area know that when you're looking for great, homemade food and an unpretentious atmosphere, Colonial House is a great choice. The family-run place has been around for more than a generation, and its eclectic decor features all sorts of memorabilia. Food is served all day, and lunch's soup, salad, and sandwich bar is a local favorite. Dinner brings on chicken-fried steak, seafood, pastas, ribs, and steaks (including buffalo). A full bar is available, as is a gift shop.

DOWNTOWN. A sunny, textural interior of brick, copper, and wood serves as an apt complement to this restaurant's creative, flavorful cuisine. MJ Adams, the chef-owner, brings a French-urban sensibility to her restaurant, and Rapid City literally eats it up. Premium ingredients go far to distinguish the fare, which includes salmon with rhubarb chutney, shredded pheasant in phyllo, buffalo empanadas, and braised lamb shanks with preserved lemons. A terrific wine list heightens all these flavors, and lovely desserts provide a delicious cap to the entire experience. A great find.

DOWNTOWN. Although the Radisson's signature restaurant may be named "Enigma," there's no mystery about its wonderful cuisine. Chef Gunter Schnepp has been with the place for many years, and his talents only grow. Perfectly cooked, tender steaks and chops are a restaurant favorite, but diners are sometimes fortunate enough to find dishes that honor Schnepp's Austrian heritage, like goulash, wiener schnitzel, and spaetzle. His chili also elicits raves from locals and has been honored at area competitions.

Jakes

DEADWOOD. This refined establishment, resting on the upper floor of the Midnight Star, occupies what was once a dry-goods store and is now owned by actor Kevin Costner. Highly rated for both its cuisine and its wines, Jakes is indisputably one of the area's best restaurants. Its superb cuisine looks to regional ingredients for inspiration and delivers sauteed walleye with macadamia butter, buffalo top sirloin, grilled duck breast with vanilla rum sauce, and oven-roasted pheasant. Live piano music adds to the subdued ambience.

DOWNTOWN. Cozy and intimate, this hotel restaurant takes note of local heritage with an interior that honors the Lakota Sioux. The menu also pays tribute to western South Dakota, thanks to dishes featuring buffalo, pheasant, local fish, and aged beef, including the place's much-requested prime rib. The Landmark has been awarded for its quality, service, and cuisine, and diners are certain to find an exceptional experience. A popular lunch buffet and a good wine list are also available.

RAPID CITY. This large hotel's dining room finds favor with both Rapid City residents and travelers, and since it's open all day, there's never a shortage of good food. Menu selections are broad, so whether you want a succulent ribeye, a terrific bowl of pasta, or even a stir-fry, you'll be plied with something delicious. Other options include fresh fish, grilled pork, calamari, and even pizzas and salads. Friendly service is a plus, along with a good wine list, lush desserts, and a popular Sunday brunch.

HERMOSA. Within this historic structure – referred to as the "Summer White House" during Calvin Coolidge's administration – lies one of the area's most esteemed restaurants. Specializing in game, the menu offers great Western flavor, as seen in grilled buffalo, deer chops, roasted pheasant breast, cornbread-stuffed quail, and pan-seared rainbow trout. The signature buffalo stew gets a dollop of creme fraiche and a sprinkling of cilantro to bring out its flavor, and desserts include a local creme brulee, served on a sweet tortilla and topped with berries.

CUSTER. This lodge dining room, like many in the area, capitalizes on the region's abundant fish and game for its menu. "Tatanka" translates as "buffalo" in Lakota, and the Native American staple can be found on the menu as salami, barbecued ribs, steaks, meatloaf, and even pie. Beef and elk steaks are also available, along with grilled trout, fried walleye, and chicken, pork, and pasta dishes. During the day, you can order picnic lunches to enjoy in Custer State Park while you enjoy the scenery and the wildlife.
