SANDY.   Carvers offers a refined setting that's ideal for a night out with clients or a romantic dinner for two. If it's the latter, ask for a table in the elegant Library Room, where a cozy fireplace and excellent views are sure to win you a few points. House specialties include prime rib that's slow-roasted for seven hours before serving and the Beaulieu Vineyards filet mignon, topped with goat cheese and mushrooms.
