4. Eclipse Chocolat

HILLCREST / BALBOA PARK.   Espousing the notion of "Chocolate-making as alchemy," chocolatier Will Gustwiller crafts little nuggets of edible gold. Combined with a wide variety of spices and other flavorings, chocolate seems much more intriguing here. Truffles made with Earl Gray tea, lavender-scented fleur de sel, basil, Balsamic vinegar, peppercorns, and chile powder; bars pungent with curry-mango, coconut-lime, or blackberry-sage. The café serves desserts, house-made marshmallows, drinking chocolate and fondue, and hosts occasional special dinners where chocolate is a feature ingredient in every course.
