RANCHO SANTA FE.   Earthy colors, a sunny atmosphere, and chef Philippe Verpiands stellar Provenal cooking makes Cavaillon a destination worth discovering. The menu is short but sweet, highlighting dishes such as classic escargot with parsley-garlic butter, cassoulet, braised veal with bone marrow, and mushroom-asparagus risotto. An unusual dish that's gotten a lot of press combines scallops with puy lentils, caramelized onions and Granny Smith apple – it's a great example of what a chef can accomplish with mixed textures and contrasting flavors.
