The Buzz -- Travelers who trek to Santiago in September will most assuredly enjoy the Independence Day celebrations that occupy the country each year. Residents revel in Dieciocho, their freedom from Spain in 1810, with dancing, parties and parades. Feasts and celebrations on the 18th and 19th of the month find cooks preparing national dishes and a full menu of delicious foods and drinks that adds spice to the freedom festivities. A central locale to observe the events is the Plaza de la Constitucion, where the passing military parade is best viewed.
