EVARISTO MORALES. Federico Fellini created great cinematic masterpieces, much like this Santo Domingo restaurant creates great Italian cuisine. Enjoy roasted duck in a tangy balsamic vinegar sauce or a superb pasta dish complemented by one of the restaurant's 300 wines. Those seeking a more informal, romantic atmosphere may ask to dine on the terrace.

ZONA COLONIAL. This formal restaurant caters to the city's business contingent, as well as to lovers on romantic getaways. The fashionable décor features soft lighting, Italian tile work, and flickering candlelight in the courtyard. An exclusively Italian wine list is a perfect counterpart to homemade pastas like gnocchi and ravioli, and osso buco is richly flavored with Italian spices. SOSUA. The cuisine at La Puntilla de Piergiorgio is unmistakably Italian, encompassing a wide range of pastas accented with lobster and shrimp. Aside from the food, many diners choose the restaurant for its idyllic setting and romantic atmosphere. The place overlooks picturesque hills and coastal mountains, one of which was nicknamed "Silver Mountain" by Christopher Columbus on his first voyage. The restaurant revels in delivering just the right touches, including a horse-drawn carriage that drops guests off at the front door upon request.

DISTRITO NACIONAL. On Wednesday night, this restaurant treats patrons to jazz, but every night, lovers of Italian cuisine gather for great dining. Of course, with a name like Spaghettissimo, you can expect finely prepared penne, gnocchi, spaghetti, and linguine. Dressed with light tomato sauce and accompanied by "Bruschetta Siciliana" (lightly toasted bread with tomatoes and basil), pastas make discerning diners eagerly anticipate a followup visit. MALECON. Probably the most popular restaurant in Santo Domingo, Vesuvio has been pleasing diners for over half a century. Pasta dishes are prepared with fresh spices and often feature recently caught seafood, including lobster, mussels, shrimp, and red snapper. "Squid's Ink Pasta" may sound curious, but local diners have discovered that anything out of the kitchen is delicious and tastefully prepared. For a more relaxed, less formal meal, head for the attached dining room, which serves pastas and pizzas.
