Naturally, local cuisine is cause for celebration, and the culinary traditions you'll encounter encompass both the low-brow and the high-brow. The former, often referred to as soul food, is the cooking of the common people. It's hearty, makes generous use of butter and frying, and tempts with dishes like fried chicken, slow-simmered green beans and sweet potato pie. To get your fill of it, head to Masada Café or Mrs. Wilkes' Dining Room and be prepared to eat like you're company. The high-brow, on the other hand, is characterized as New Southern cuisine, which takes customary ingredients and transforms them into gourmet fare, deconstructing, reinventing, and, often, making healthier. You can sample it at establishments like Elizabeth on 37th and The New South Café. Of course, expertly prepared American dishes are always clamored over, and places like The Sapphire Grill and 45 South do them the justice they deserve. Seafood, too, gets dual treatment in Savannah. Fresh-shucked oysters and fried shrimp are simple preparations that everyone loves, but creative chefs also draw out the pristine flavors with Continental touches like sauces, glazes, and nutty, crunchy crusts. Never fear, though it's all good, as you'll quickly see.
