SCOTTSDALE. Serving innovative American cuisine with Italian, Southwestern, and Mexican influences, Cowboy Ciao also features eye-catching decor, thanks in part to a star-studded ceiling. The varied menu includes elk strip loin with mushroom risotto, and roasted pork shank with cumin, chipotle, paprika, and Mexican oregano. The signature dish – exotic mushroom pan fry – consists of wild mushrooms in ancho cream sauce over polenta, and it is divine. The wine list is extensive, and the dessert menu is truly irresistible.

PARADISE VALLEY. This place pays homage to Arizona's rustic Southwestern cowboy history in the most elegant of ways; the ambiance is strikingly different from what you would expect. The decor suggests cowboy, but the menu and staff dress it up and give the whole place an air of luxury. Menu highlights might include prickly pear-lacquered breast of duck and roasted poblano chile rellenos. The unique Sunday brunch menu offers such things as chicken and mushroom hash and cheese omelets smothered in poblano hollandaise. Additionally, everything on the menu is organic, humanely raised, and from ecologically sound sources.

ART DISTRICT. Old Town presents Southwestern cuisine with flair. The darling little cottage (with patio) is set among citrus trees that are especially fragrant in spring. Enjoy the greenery and flowers, and don't miss the refreshing fountain. The gazebo has a bar where you can enjoy frozen margaritas, and the ever-changing menu presents chorizo fundido, tequila-lime chicken tostadas, and red chili-crusted pork chops. Business causal attire. Reservations recommended.

NORTH SCOTTSDALE. One of the fine dining establishments at the Millennium Resort McCormick Ranch, Piñon Grill promises a great view, romantic atmosphere, and top-notch cuisine. Secure a table overlooking the water as you dine on Chilean sea bass crusted in peanut mole and served with a sweet, tangy coconut-lemongrass broth or on chipotle-marinated salmon. Beef, veal, and poultry are also represented. Cocktails are a change from the ordinary; sip a prickly pear margarita after dinner for a true Sonoran nightcap.

SCOTTSDALE. Laid-back and unpretentious, this Valley restaurant serves creative interpretations of comfort food. The interior is totally personal, an off-beat cowboy decor enlivened by hip accents. The cuisine, which has garnered a number of awards, places an emphasis on local, organic foods. The menu constantly changes and is dependent on whatever is fresh and available each day. Many of the entrees are grilled or cooked in a wood-burning oven, imparting them with a smoky flavor that seems appropriate to the region. The wine list, all 5000 bottles of it, ensures that each meal will find its best complement.

SCOTTSDALE. A welcome change of pace, Roaring Fork entices patrons with homemade beef jerky and great cocktails, which are especially appealing when you have to wait for a table. Inventive chef-owner Robert McGrath artfully creates American Western cuisine, merging campfire traditions with bistro fare to produce truly outstanding dishes. Among the attractions are beef short ribs, duck breast, and buttermilk fried chicken. The ambiance is a mix of rustic and elegant, and the place promises great dining memories. Great happy hours too (Monday to Saturday, 4pm to 7pm).

This pleasant hotel restaurant offers spectacular views of the surrounding McDowell Mountains from indoor and open-air dining areas, not to mention superb service and casual, relaxed atmosphere. Pan-seared maple-glazed salmon and a roasted rib-eye with grilled asparagus are two dinner favorites, as are wood-fired roasted chicken and smoked baby back pork ribs. Sunday brunch is a tempting highlight as well.
