Try whatever tickles your fancy – just don't leave until you've tried their legendary seven-layer fudge cake!

CAPITOL HILL. Come early if you've got a hankering for the sweet Southern soul food this family-owned establishment dishes up. Whatever the crowded pair of dining rooms lacks in space and elegance is made up for in the quality (and quantity) of down-home cooking. Classics like buttermilk fried chicken, catfish, barbecue, vinegary collard greens, and macaroni and cheese (with onions and mushrooms) are prepared simply and served piping hot. Dessert is predictably heavenly: red velvet cake with buttercream frosting and strawberry shortcake are perfect finishing touches.

CAPITOL HILL. High ceilings, wooden beams and white linens adorn this restaurant's tastefully rustic interior. Prepared with ingredients from nearby farms, its dishes are designed to share and include charcuterie and a wide variety of cheeses. Other delicacies you might find on the menu range from crispy duck leg with braised spring vegetables to baby octopus with black Venere rice, peppers and smoked ham. Over 50 labels appear on the wine list.

DOWNTOWN. This once-tiny restaurant, greatly expanded in 2007, offers incredible views of the Market and beyond, courtesy of huge, semicircular windows. Flawless seafood is the name of the game, and it's collected fresh from vendors below. Oyster sandwiches, often eaten at the counter, are much-coveted at lunch, and dinner calls forth such delicacies as tortilla-crusted Alaskan halibut, pan-roasted wild salmon, and mussels steamed with chorizo, charmoula, and cava. In the evenings, the atmosphere is candlelit and romantic, although tables are at a premium. Don't leave without treating yourself to the chocolate pot de crème, a signature dessert that's a perfect ending to the fantastic cuisine.

GREENLAKE. Offering picturesque views of Green Lake, Nell's offers a contemporary American menu that wows customers with its deep, rich flavors. Thanks to local ingredients and a knack for skillfully incorporating pungent seasonings, the chef brings patrons amazing taste and culinary innovation. Among the dishes you'll find are organic veal, beef tenderloin, duck breast, sturgeon fillet, and even sweetbreads in a lush veal reduction. Side dishes, including rosemary-pecan bread pudding, almond couscous, and caramelized turnips serve as beautiful complements. Multi-course tasting menu $45.

DOWNTOWN. Owned by football player-turned-restauranteur Tom Douglas, this hip downtown dandy is a favorite of everybody from the happy hour crowd to night owl diners. Entrées include pan-roasted quail, sheep's milk ricotta ravioli, and Sara Joe's organic pork loin, served with sautéed greens and mustard fruits. If you're so inclined, opt for something straight off of Douglas's famous apple wood grill – you can't go wrong with the Copper River sockeye salmon, Idaho trout, or rib-eye steak with Walla Walla onion. Reservations accepted for parties of six or more.

BELLTOWN. A wall of windows opens up the corner venue that's home to Zoë, expanding a space distinguished by hardwood floors and muted colors. The restaurant offers New American cuisine that's tempered by a Mediterranean sensibility. Grilled romaine salad, touched with Roquefort dressing, is a house specialty, as is the hangar steak, smoked and grilled to an ideal tenderness. You'll also be enticed by pan-roasted leg of lamb, rare filet of wild salmon, sea scallop risotto, spicy roasted chicken, and sweetbreads flavored with roasted onion and smoked bacon. Desserts include bread pudding, flourless chocolate cake, fruit tarts, and crème brûlée. While you're around, make sure to sample their wines and, especially, the martinis, which are tasty and unusual.

DOWNTOWN. The Hotel Monaco in downtown Seattle is really heating up, thanks in part to chef Jan Birnbaum, the driving force behind Sazerac. The fashionable restaurant serves spicy, Cajun-inspired New American cuisine, including golden hush puppies served with warm molasses, Creole shrimp cakes, black mussels with cumin butter sauce, and braised beef served with a gorgonzola potato creation. Modern, amusing interiors make this a must on your restaurant list.
