DOWNTOWN. A business-friendly steak house in the heart of the financial district, Metropolitan Grill has been a Seattle favorite for years. Dry-aged, prime-grade beef is a steak-lover's dream, although a good selection of pastas and salads rounds out the menu as well. The wine list is exemplary, focusing on reds that go with the beef-laden menu. Service is helpful but unobtrusive, and the dessert tray is too good to pass up.

QUEEN ANNE. A traditional favorite, Canlis overlooks the beauty of serene Lake Union. Even if it weren't in such stunning surroundings, the restaurant would capture your fancy with its incredible cuisine. Among the offerings are stuffed chicken, lamb shank with puréed mint and garlic, and delectable cuts of beef and fresh seafood. If you can't make up your mind, try the fixed price menu, pairing each dish with a wine from their terrific collection. After all, Canlis is one of only 85 restaurants in the world to have received the "Grand Award" for its wine list. 5-course tasting menu $80, $115 with wine.

MADISON PARK. Upscale crowds applaud this lovely restaurant for a sushi bar that delivers maki and sashimi fashioned from the day's freshest catches. In addition, cooked items and luscious omakase meals are available for diners who crave something besides sushi. Nishino's subdued atmosphere provides a perfect environment for enjoying a relaxing dinner, whether it's in the colorful dining room or on the peaceful outdoor patio.

DOWNTOWN. The delightful Campagne offers well-prepared French Provençal cuisine at Pikes Place Market and Elliot Bay. Overlooking the flower market's colorful splashes of flora, Campagne offers a lovely dining room, simple but elegant and welcoming. The menu maintains French techniques while capitalizing on the best local ingredients. Among the offerings are tender lamb, lightly seared sea scallops, succulent beef tenderloin with foie gras butter and braised artichoke hearts, and crisp calamari with thyme and lemon.

DOWNTOWN. Intimate, romantic, and adorned with Renaissance artwork, Assaggio brings you the best of Italy without your ever having to leave Seattle! Owned and managed by Mauro Golmarvi, the restaurant guarantees diners the best Italian fare. The menu offers a range of pasta, chicken, veal, and seafood entrees, but must-try dishes include pappardella bosciaola (pasta flavored with mushrooms, Marsala, and Barolo wine) and agnello osso buco, the traditional favorite made with lamb instead of veal. Marco's frequent trips to Italy also ensure that a wealth of Italian wines are available to complement any dish.

SHILSHOLE. A quintessential Seattle experience is having a meal at Ray's. Views of the mountains and the water, especially in sunset's glow, thrill diners almost as much as the cuisine. While many dishes have Asian flair (like pan-seared scallops in green curry or kasu-marinated black cod), others revel in simple preparations, like oysters on the half-shell, crab cakes, and grilled wild salmon. The downstairs venue offers upscale dining; the cafe upstairs is a bit more casual. A wonderful wine list ensures that you'll have a terrific vintage to complement the food.

At this tiny, unconventional restaurant, the food's served by the owner, who discusses the week's menu with patrons and even selects the wine. Created with seasonal and organic foods, the exceptional fare might include eggplant parmesan, pork shoulder with pistacio aillade or sole with hazelnut brown butter and squash. Space is extremely limited, so arrive early. Cocktails served 5pm-6pm.

BELLEVUE. Emphasizing seafood from the Puget Sound and the Pacific Northwest, this innovative, upscale restaurant is one of the best reasons to make a short trip east to Bellevue. DOWNTOWN. Hip and stylish, Andaluca is a study in rich tones and sculptural shapes. The menu features local produce prepared with a Mediterranean twist.
