9. Nogawa

ORCHARD ROAD.   Yoshio Nogawa is probably Singapore's most respected Japanese chef, and he has trained legions of younger chefs who now populate upscale kitchens and sushi bars all over town. His eponymous restaurant is the perfect place to put that reputation to the test. Because of his insistence on absolute freshness, the menu varies with the seasons – suffice to say you will sample the finest sushi and sashimi and most wonderful tempura and teriyaki this side of Osaka. Nogawa divides his time among three restaurants, all of which are fantastic. You may also like to try his Akane (at the Japanese Association on Adam Rd), or Nogawa at the Sentosa Golf Club.   (© 10Best)
