Ignatius Chan has an international following and a slew of awards, and with Iggy's he has created what many people consider the perfect restaurant. It's a cozy 28-seat spot on the third floor of the Regent Hotel, and more than half of those seats are at the counter giving diners an up-close view of food preparations and a more intimate rapport with the kitchen staff. You might not expect a German chef, in this case Dorin Schuster, to have a knack for Chinese cooking. You will be very pleasantly surprised at his mastery: dishes such as sea scallop topped with foie gras purée and yuzu juice, and Wagyu beef cheeks in honeyed pinot noir sauce, really shine. And the wine list is truly wonderful, thanks to Chan's world travels.   (© 10Best)

BAD FORM
Just a quick note to share our recent experience at Iggy's... After making reservations weeks in advance for a Monday lunch we were turned away at the door by the manager because our four-month-old daughter was in tow. Now, a word on our daughter. She has been eating in fine-dining restaurants since she was two-weeks-old and is much better behaved than any lobbyist I have lunched with - not to mention many of my friends in investment banking. The staff at Iggys was cold, awkward and unaccommodating. Lucky for Iggy's they are framed by The Regent Singapore. Its expert trained staff was able to smooth over this issue and accommodate us in another venue. This reminds me of what makes a great restaurant or hotel, which is of course the cornerstone of The Four Seasons brand - friendly, professional, well trained staff. It would have been better form for Iggy's to communicate the 'no families' policy on their website or communicate this during the reservation process. Cuisine and decor are critical for a great restaurant - to be truly great the competence and professionalism in the back of the house must be matched by the team in the front of the house. Anyway, skip Iggys if you have a family...
