4. Hua Ting

For several years now, Hua Ting has been earning awards for its Chinese cuisine. Chef Chan Kwok turns out fabulous dim sum for lunch, and strikes a careful balance between tradition and innovation with his a la carte menu. Soups, such as the double boiled shark fin soup, are especially good, and braised Australian abalone and rice wine steamed clams are excellent as well. Authentic Cantonese dishes are the specialty here – expect to find delicacies such as birds' nest, preserved egg, fish maw and other dried seafood, and various organ meats on the menu.
