ORCHARD ROAD.   Li Bai is named for a Tang dynasty poet, and you might say the dining room is lyrically decorated – it's certainly attractive, with thoughtful attention to color and texture, even to the tableware. Traditional Cantonese cooking, with a few modern twists, is the specialty, and the chef continually updates the menu and creates new dishes. Some of the most popular options are double-boiled shark cartilage soup, cod sautéed with ginger and garlic, tea smoked chicken, and crab fried rice.
