8. Ras

CLARKE QUAY.   "Ras" is a Hindi word meaning "juice" or "essence", and this is one restaurant that certainly captures the true essence of Indian cuisine. Situated in a restored shophouse in energetic Clarke Quay, it has something of a retro, 1960s feel about it, a surprisingly apropos setting for a fine north Indian meal. Traditional offerings such as butter chicken, palak paneer and fantastic lamb vindaloo all earn raves, but there are a few more unusual modern dishes that also deserve praise, such as the succulent tandoori lobster.
