SOUFRIÈRE.   This stylish restaurant is located in the Soufrière region, adjacent to beautiful Hummingbird Beach. The French Creole fare is accented with local herbs and the fresh vegetables that accompany your meal were probably grown in the Hummingbird's garden. Try the fresh conch or lobster, with a bottle of wine from one of the Caribbean's finest cellars. The Hummingbird's signature dish is marinated Dorado stuffed with herbs and bread. A selection of sandwiches, burgers and salads assure that every palate is satisfied. During daytime hours be sure to visit the adjacent batik studio that features designs by the proprietress.
