CASTRIES. Chef Harry runs the Green Parrot, one of St. Lucia's most renowned establishments. Before your meal visit the bar and try a "Grass Parrot," a heady concoction made from coconut cream, crème de menthe, bananas, and white rum. Chef Harry's classical training (at the famous Claridge's in London) is evident in the exquisitely prepared food. Try the christophine au gratin – a casserole made from cheese and a variety of Caribbean squash. There is also an excellent selection of curries served with fresh chutney. Many evenings there is entertainment in the dining room. Don't be surprised to see a belly dancer or fire-eater! On Monday evenings ladies receive a free meal if they wear a flower in their hair and are accompanied by "a well-dressed gentleman." Jacket required. Reservations essential.
