ST. PETERSBURG.   What was once one of St. Petersburg's finest restaurants for Pacific Rim cuisine has now switched its menu to tap into the Latin American trend. Within a soothing space of pale colors and contemporary artwork, diners tuck into a variety of intriguing dishes that capitalize on tropical ingredients and preparations. Argentinian beef tenderloin, chicken stuffed with queso fresco and herbs, and duck breast in a Chilean merlot escabeche hint at the possibilities.
