   EDITOR REVIEW:

CENTRAL BUSINESS DISTRICT.   The jewel in Sydney's culinary crown, this fusion restaurant combines Japanese and French flavors in unique dishes, such as roasted ocean trout with salt and seaweed crust. The ten-course degustation meal lasts about three hours for lunch and three and a half for dinner. The cuisine is designed by one of Australia's most well-known chefs, and you can expect to dine alongside the rich and beautiful in this upscale, exclusive restaurant. Get resrvations well in advance - the wait list for weeknights tends to stretch to three months, for weekends it frequently exceeds six months. Degustation meal AUD185. Located near Town Hall.

Excellent, although the sommelier needed a lesson in manners.
