HYDE PARK. One of the Bay area's favorite restaurants, Mise en Place changes its menu every day, so although you're never guaranteed a particular dish, you can always be certain of an incredible meal. Clean-lined and stylish, the bistro demands fresh ingredients and skillfully transforms them into such delicacies as roast duck with wild-strawberry sauce, Creole-style mahimahi, or pecan-crusted rack of lamb. The clientele is upscale and fashionable, but first-timers shouldn't be intimidated. Tasting menus $21-36, $32-55 with wine.

HARBOUR ISLAND. Quiet, casual, romantic – Café Dufrain represents all the qualities that make Harbour Island seem worlds away from Tampa's bustling downtown area. Set amongst high-rise condo and apartment developments, this American eatery seamlessly blends a casual, European-inspired attitude with outstanding fare that refuses any singular brand of classification. Indeed, on the one hand are dishes like duck with Thai barbeque glaze and seared ahi tuna with ginger-tamarind soy sauce; on the other are baked chicken rigatoni, wild mushroom meatloaf, and Creole-marinated chicken. A final word: From the waterside patio, the views of downtown leave quite an impression, especially at night.

AIRPORT AREA. If you can't get enough succulent, Southern cooking, this place (named for Tampa Bay's first NFL Hall of Famer) will have your taste buds swooning. Many dishes rely on Lee Roy's mom's recipes, such as fried chicken, meat loaf, chicken-fried steak, and beef brisket. Others just pay tribute to the region, like ribs, barbecued pork, and stuffed catfish. Steaks, burgers, and salads also find their place, and no meal would be complete without pecan pie or peach cobbler. The interior boasts a wealth of football memorabilia.

SOUTH TAMPA. Anyone who comes here knows that Kojaks is good eating! Open since 1978, this laid-back restaurant is well-known for its fantastic ribs, and the locals concur, having named it an area favorite for many years. Diners tackle heaps of barbecue, braking only for a bite of coleslaw or some famous parsley potatoes. Although you can sit inside in one of three rooms, the best setting is out on the porch, where you can enjoy the breezes and the freedom that comes with outdoor dining. For an added treat, make sure you try a slice of homemade chocolate cake or a glass of ice-cold sangria.

HYDE PARK. This local hotspot has cemented its reputation by pairing terrific foods with a range of wines available by the bottle or the glass. In the Mediterranean-inspired bistro, diners may choose from pastas, pizza, salads, sandwiches, or a variety of entrees, depending on the time of day. Dishes feature simple ingredients skillfully prepared and flavorful; look to the grilled Delmonico steak, blackened pork tenderloin, or dijon-crusted salmon for proof. The place can be busy at times, so know that you may have to wait for a table, especially on the patio or at lunch. And remember to ask about the chef's specials when you go.

SOHO. It's befitting that a trendy stretch like SoHo boasts Tampa's main outlet for California-influenced cuisine. Incorporating the tastiest innovations of North America, the Mediterranean and Asia, the creative force behind Ciccio & Tony's produces some of the Tampa area's most flavor-infused dishes, from yellow fin tuna with mango-lemongrass sauce and herb-coated organic St. Peters fish to bacon-wrapped Black Angus filet and linguini with Little Neck clams.
